The workshops :
Created in honour of the famous cycle race over a century ago, the shape of the Paris-Brest is reminiscent of a bicycle wheel. The Chef will give you his techniques and tips for making a Paris-Brest with a flowing praline heart. During this 3-hour workshop open to all, you will learn how to :
- Make a choux pastry
- Prepare a pastry cream
- Make a homemade praline
- Make a cracker
- Assemble, garnish and decorate the Paris-Brest.
At the end of the workshop, you'll go home with your own Paris-Brest (5 to 6 choux) and a recipe sheet so you can reproduce the techniques you've learned at home.
Discover a classic French pastry: the Saint Honoré! Our pastry chef will share his techniques and tips with you:
- making choux pastry
- make a cracker
- preparing a crème diplomate and a chantilly cream
- garnish the choux and assemble the St Honoré.
At the end of the workshop, you'll leave with a recipe sheet for reproducing the techniques you've learned, as well as your own creation: 1 Saint Honoré (4 people)!
Want to learn how to make your own black forest? The chef will help you discover the secret of this cake in a fun and friendly atmosphere.
The techniques covered in this workshop are :
- Preparing a chocolate génoise
- Working with a mascarpone whipped cream
- Garnishing the cake with chocolate shavings.
At the end of the workshop, you'll go home with your own black forest (4 people), as well as the recipe for reproducing the techniques you've learned.
Surprise your friends and family by making your own macaroons! A macaroon specialist will show you his techniques and tips for making delicious Christmas macaroons (or not!):
- Making macaron dough
- Laying the macaroons
- Mastering drying and baking
- Preparing a sweet and savoury ganache
- Assemble and decorate macaroons.
At the end of the workshop, you'll leave with your creations of the day: 7 champagne macaroons and 7 savoury macaroons, as well as the recipe for reproducing the techniques you've learned.
