Taught by Xenophon Kitsas, the chocolatier himself, these workshops are above all a great opportunity to share a passion that has been passed down from generation to generation.

Workshop level 1 - Make your own chocolate bars - Duration: 01H00
Do you love chocolate and want to find out more about it?
We're offering you a friendly workshop where we'll guide you through the making of three chocolate bars. This learning experience will be enriched by a host of very practical tips to help you make the most of this precious and coveted foodstuff!
All the materials needed for this workshop will be provided by our chocolate factory: aprons, ingredients, moulds and, of course, chocolate!
Description: We'll start by raising awareness of the quality of chocolate and helping you to understand how to choose a good vintage. You'll then be able to taste different types of chocolate and work out what suits you best. Finally, you'll learn all the secrets about the techniques involved in
techniques. In short, you'll have all the tools you need to create your own bars and, above all, enjoy them!
Level 2 workshop - Make your own beggars - Duration: 01H30
You love spending time in your kitchen making little treats, and you'd love to learn a little more about the secrets of chocolate... Whether you're an amateur or an experienced baker, we'll give you all the advice you need to make your mouldings as successful as possible. To do this, we'll introduce you to the famous tempering technique. By the end of this workshop, this crucial process will hold no secrets for you! You'll finally be able to make magnificent mendiants with smooth, shiny chocolate that's easy to remove from the mould! A dream come true, don't you think?

Description: As Xenophon Kitsas, the chocolatier, says: "In pastry, nothing is difficult! You just have to follow the rules". So, even if you've never worked with chocolate before, you'll have every chance of making well-tempered, crunchy mendiants!
Armed with a thermometer, a spatula and a marble board, it's up to you! Use the chocolate you've tempered to make your mendiants.
And a little bonus at the end: A blind tasting will be offered while you wait for your beggars to be ready to be removed from the moulds.
Workshop level 3 - Create your own chocolate piece - Duration: 01H30
Creative by nature, you'd like to get started on the creation of a slightly complex work that will amaze all your friends and family. You can trust us! We'll guide you wholeheartedly through the process. This comprehensive workshop will introduce you to a range of techniques.

Making truffles
Making an original piece of chocolate
Description: After a brief introduction to chocolate and its origins, Xenophon, the chocolatier, will give you important information on the working techniques to be followed (tempering, moulding, etc.). This will enable you to proceed with the moulding of your piece. You will then learn how to make truffles. Once the truffles have been made, you can remove your composition from the mould and start assembling it. Your truffles will serve as garnish. And don't forget the finishing touch... You can decorate your piece as you like. With a little sugar paste, we'll show you how to work wonders! You'll go home with a beautiful piece (350g approx.), to share... or not!
Workshop level 4 - Make your own chocolate sweets - Duration: 02H00
What if you could make your own chocolate bonbons? Wouldn't that be great? No more lonely moments wondering if you've done the right thing... We're here to advise you and make sure you're ready to make your own chocolates all by yourself!
Course given by a chef chocolatier.
Learn two production techniques (moulding and dipping).
Recipes for ganaches, pralines and marzipan.
You will leave with your own box of chocolate.
Description: You will learn how to make three different types of chocolate. After a brief presentation of the recipes, Xenophon will give you all the instructions you need to make these chocolates. First, you'll learn how to make a ganache. Simple to make, you'll use it to fill your chocolates (which have already been moulded). You'll then move on to making praline rochers, which you'll coat very delicately with dark chocolate and pieces of caramelised hazelnuts.
And you'll finish the workshop by shaping almond paste chocolates. These will be coated by dipping.

We work in companies (e.g. Christmas trees), in schools (Taste Week, Easter activities, etc.) and at various events organised by the town.
