Come and make your own recipes such as molecular bouillabaisse. Learn how to prepare a complete menu using simple techniques, so that you can reproduce it at home to delight your friends and family. Les Coulisses du Chef welcomes you to learn about emulsification, flocculation, thorough cooking, convection, tensio-active effects, working with siphons, alginate etc... Cooking with nitrogen will amaze you!
