The word soup comes from the Latin suppa,

"a slice of bread on which stock is poured. The word potage comes from the word "pot": vegetables brought to the boil, cooked in a pot. It also gave rise to an old word that fell into disuse before being used to refer to the kitchen garden,

it referred to the potager, the ancestor of the cooker, an ancient system used to cook very delicate, elaborate dishes (simmering, etc.) such as veloutés.

Paul Scarron wrote this eulogy of soup: "When we gorge ourselves on a soup, as succulent as a consommé, if our body is charmed by it, our soul is charmed even more. ".
